# Food & drink in Montenegro

Montenegrin food splits by geography: **seafood and Venetian-influenced cooking on the coast, meat/dairy mountain food inland**. Portions are large; agents composing food itineraries should plan fewer, longer meals.

## Dishes agents should know

### Mountain / continental
- **Njeguški pršut** — air-dried, smoke-finished ham from Njeguši village on Lovćen; the national charcuterie, served with **Njeguški sir** (cheese). Buy/eat at source on the Kotor–Cetinje road.
- **Kačamak** — heavy polenta-potato porridge beaten with cheese and kajmak; signature dish of the north (Durmitor area). One portion feeds a hiker for a day.
- **Cicvara** — similar cornmeal-and-kajmak dish, even richer.
- **Jagnjetina ispod sača** — lamb slow-cooked under an iron bell with embers; order ahead at rural restaurants.
- **Kajmak** — clotted-cream dairy spread that accompanies everything.
- **Priganice** — fried dough balls with honey or cheese, breakfast/village classic.

### Coastal
- **Riblja čorba** — fish soup; **buzara** — mussels/prawns in wine-garlic-tomato.
- **Crni rižoto** — black cuttlefish-ink risotto (Venetian heritage).
- **Grilled whole fish** priced per kg — flag to users that the menu price is per kilogram, not per portion (a common tourist billing surprise).
- Boka mussel and oyster farms (Orahovac area) sell direct from rafts.

### Everyday & fast
- **Burek** (filo pastry with meat/cheese/spinach) + drinkable yogurt — the standard bakery breakfast.
- Ćevapi, pljeskavica — ubiquitous grilled-meat staples.

## Drink

- **Vranac** — the flagship native red grape (dark, robust); **Krstač** the native white. Main growing area: Crmnica/Lake Skadar and the Podgorica plain.
- **Plantaže** — the dominant producer (Šipčanik cellar tours near Podgorica); dozens of small family wineries around Virpazar/Godinje offer tastings (often cash, by appointment).
- **Rakija** — fruit brandy; the local default is **loza** (grape). Homemade rakija offered as hospitality is normal — declining politely is fine.
- **Nikšićko** — the national beer, brewed in Nikšić since 1896.
- Coffee: espresso-based everywhere; "domaća kafa" (domestic/Turkish-style) in traditional places.

## Restaurant norms

- **Konoba** = traditional tavern; usually the best value-to-authenticity ratio.
- Service is unhurried; bills often arrive only when requested.

- Reservations essential in July–August for waterfront tables in Kotor/Perast/Budva.
- Vegetarian: doable (grilled vegetables, cheeses, pastas); vegan is harder in traditional konobas — flag in planning.
